For a remote regional based Chinese Restaurant, the New Dynasty was quite good. And I can relate to what they're trying to achieve in an outback Australian regional centre. I asked them if we could have something that the chef would cook for people who were used to eating various Chinese cuisine all over the world, but they kept wanting to point us to what was popular for the local patrons. I didn't really want the 'Australianised Chinese' menu, but found it hard to make them understand. We settled on the heavily promoted 'crispy skin duck', which although having a lovely subtle 5-spice marinade flavour, ended up being a bit too crispy, and was unfortunately overcooked. It would have been lovely if a little less dried out. We also had their special Mongolian sauce with lamb in a sizzling plate. It was a tasty Mongolian sauce, if a tad on the heavy handed side of the salty/sweet balance. When I asked for vegetables, we finally understood each other, as I mentioned Asian greens, & the waitress was concerned that this was what the chef served up for the staff. Having reassured her that we wanted to be eating what they, the Chinese staff, would be eating, we finally got it right and had a lovely plate of wok tossed Chinese spinach with garlic. My only suggestion for the management is to perhaps have a separate small menu (in English) of what they would cook for their Chinese or Malay friends, that they can offer to the more culinary adventurous Anglo-saxon travellers who pass through their town.
